10 Minute Fajita Bowl

One of my New Year’s Resolutions is to try to cook more often. Before I would eat out for almost every meal and by eating out I mean pizza or Buffalo Wild Wings. All super delicious but not great for someone whose health is important to her. Since making this resolution, I’ve only eaten out twice (once was at 2 AM celebrating a friend’s 21st aka excused) and have been refilling a 40 oz bottle water multiple times a day. All very great mini celebrations! That being said, expect to see more food and baking related content as I experiment my way through my Pinterest board.

On last night’s menu was something super quick fajita-inspired bowl Have you ever seen pictures of burrito bowls or taco bowls? They look so delicious and I love how versatile they are. I didn’t have much time to prepare this meal so I collected a few random ingredients and created this “shit I found in my kitchen” bowl. 😂 (And excuse the low-quality pictures I wasn’t expecting to photograph my dinner.)

What You’ll Need:

  • Brown rice
  • Shredded chicken
  • Corn
  • Red peppers
  • Avocado
  • Cayenne Pepper
  • Onion Powder
  • Garlic Powder
  • Lime

It’s a really simple recipe to follow. All you have to do is cook all of the ingredients as their personal recipes call for and then layer them as shown in the photos below. **When I grilled my chicken I added a pinch of onion powder, garlic powder, and cayenne pepper for taste. I also added a little bit of lime juice to the chicken while it cooked and again after everything was prepared. I can honestly say it was the best-seasoned chicken I’ve ever made!
